What is leitão?
Leitão is roast suckling pig, and in Portugal it usually means leitão à Bairrada: a young piglet rubbed inside with a paste of garlic, salt, pepper and lard, roasted whole in a wood-fired oven until the skin is glassy and crisp. How leitão à Bairrada is made
A young pig, usually a few weeks old, is rubbed inside with a thick paste of garlic, salt, lots of black pepper, lard and bay leaf, then skewered and roasted whole in a very hot wood-fired oven. The fat bastes the meat as it cooks, and the skin turns thin, golden and crackling-crisp while the meat stays soft and juicy.
The juices and seasoning collected from the cavity become the molho, a peppery, garlicky sauce poured over the meat. Leitão is served in pieces of skin and meat, never as a neat slice, with homemade potato crisps, orange slices to cut the richness and a green salad.
Where to eat it
The heartland is Bairrada, between Aveiro and Coimbra, and especially Mealhada, where restaurants specialising in leitão line the old N1 road. Its rise as restaurant food is usually traced to the 1940s, when a local seller began offering leitão sandwiches to drivers on the N1 and then opened one of the first restaurants serving it. In 2011 a public vote named leitão da Bairrada one of Portugal's 7 Maravilhas da Gastronomia (Seven Wonders of Gastronomy), the winner in the meat category.
Menus usually offer a dose (full portion, often enough for two), a meia dose (half portion), or leitão by the kilo to share.
