What is tortilla española?
Tortilla española, or tortilla de patatas, is a thick, round omelette of eggs and slow-cooked potatoes, usually with onion, fried in olive oil and served in wedges. It has nothing to do with the Mexican flatbread. In Spain you'll find it as a pincho (a single slice) at the bar or as a ración on tapas menus.

How a Spanish tortilla is made
Thinly sliced potatoes, and usually onion, are cooked slowly in plenty of olive oil until soft, not crisp. They're drained and folded into beaten eggs, then the mixture goes back into a hot pan. When the bottom has set, the cook flips the whole tortilla onto a plate and slides it back to brown the other side. The result is a golden disc several centimetres thick.
Two debates divide Spain. The first is onion: con cebolla or sin cebolla. The second is how cooked the centre should be. A jugosa or poco cuajada tortilla is soft and slightly runny in the middle; a bien hecha or cuajada one is set all the way through.
