Escargots are land snails, and on a French menu they almost always mean escargots de Bourgogne: snails baked in their shells with sizzling garlic-and-parsley butter. They're a starter (entrée), served by the half-dozen or dozen with special tongs, a small fork and bread for the butter.

What you get

The cooked snails are put back into their shells (or into a dish with small hollows), sealed with beurre d'escargot, a butter mashed with garlic, parsley and shallot, then baked until the butter bubbles. Some cooks add white wine or a crust of breadcrumbs. The flavour is mostly garlic and butter; the snail itself is mild and slightly earthy, with a texture between a mushroom and a mussel.

You grip each shell with the spring-loaded tongs (pince à escargots), pull the snail out with the two-pronged fork, then tip the butter onto your bread.

Where escargots come from

Wild Burgundy snails (Helix pomatia) are scarce and gathering them is restricted in France, so most snails served today are farmed or imported, many from Central and Eastern Europe.   • Bulots — Whelks: sea snails, boiled and served cold with mayonnaise, usually on a seafood platter.

Are escargots shellfish?

Snails are molluscs, the same group as clams, mussels, octopus and squid, not crustaceans like prawns or crab. Allergy labelling in the EU lists molluscs as their own allergen. If you've reacted to molluscs before, avoid escargots and mention the allergy to the staff when you order.

How do you eat escargots?

Hold the hot shell with the snail tongs in one hand and use the small two-pronged fork to pull the snail out. Eat it in one bite, then tip the remaining butter from the shell onto a piece of bread. If they come in a dish without shells, just pick each one out with the fork.

How do you pronounce escargots?

Say es-kar-GOH: in IPA, [ɛskaʁɡo]. The final t and s are silent, so the singular escargot and the plural escargots sound the same. The r is the French throaty r, and the stress falls lightly on the last syllable. Escargots de Bourgogne is es-kar-GOH duh boor-GON-yuh.
